We are in full-busy-fall-time-mode at my house!! It's all good and I am really trying to keep things in perspective and not get overwhelmed...so far...pretty good...lol!!! I was sick for a few days :( and then my parents came to town for a bit. It was GREAT to have them here!! We didn't do a whole heck of a lot! Since I'm homeschooling oldest dd half day...it kinda prevents us from doing full day things. I homeschool her for math and science (and PE lol) in the mornings and then she goes to school for the rest of the day. It is really working out GREAT for her, which is what matters. It just makes it hard to get anything done OUTSIDE of my house since baby girl naps in the afternoons. We did go to some antique shops, out to lunch almost every day. Went to Costco :) and soccer games of course!! Mom and Dad did a lot to help around here (they say they didn't, but they really did!) It's just nice to be able to reconnect with people you love!
I keep thinking that I am going to get a pdf put together with all of my recipes that I use for freezer meals...but it keeps staying on the bottom of my list (sorry). So for now here are some links :) These meals have really saved my hind-end this fall!! One suggestion, I did one casserole (Chicken and Poppyseed) that is a comfort food for me. I doubled it and then divided into 4 pans. I can't tell you how glad I was while I was sick to have that comfort food!!!! :) Okay...links...
Chicken Enchiladas (I used half/half instead of cream and lowfat cream cheese, cause we have to do that at my house...lol)
Spaghetti Pie (I did half ground beef and half sausage on this one and it was really good!!)
Little Meat Loaves
Poppyseed Chicken Casserole (I serve this over rice, to make things really easy, cook up the rice and layer in casserole and then bake it all together)
Pizza Roll-Ups (I have not tried these yet, but they would freeze well)
I also froze:
2 pot roasts
2 pork roasts
some sirloin steak in marinade (bought a bunch at a really good price)

The other thing I was going to tell you about is this silly thing that happened to me that will be keeping me very very busy the next couple months!! A couple months ago, we got a flier in the mail from one of the community theaters about upcoming shows and on it, it said that they were currently doing auditions for all shows. My oldest dd is quite the actress and LOVES it too!!! So, she saw that and started nagging me to find out when she could audition for one of the shows she was interested in. Finally, I gave in and called and made her an appointment. I put together a monologue for her and she practiced it for a couple days before her audition. She really has an ability to memorize! Sooooo she auditioned and I was in the room with her (of course...I wasn't leaving...lol) she did her monologue and did a really good job!! He then had her do some improvisation and she ROCKED it!!! I was soooo proud of her!!! He told us we would hear back in a couple weeks...so we waited and waited. After a couple weeks I called and got the director and she said it would be a couple MORE weeks. So, we waited and waited and waited some more...lol. They finally called and wanted her to come back in for a call back and asked me if I had ever done any acting. I told her that I had back in highschool, but hadn't done too much of it since. She said that they had a few "mom type roles" and would I be willing to audition. I said sure! So off we went to our auditions...lol. I read for several different parts (as did everyone there). The main adult female role is THE MOM--lol!! Since there was only one DAD auditioning and he is shorter than me, I figured I would be one of the gossipy ladies from the church, which was fine with me...those characters would be FUN!!! Well the director called on Saturday and dd got a smaller lead role (not the main lead but still a lead) and I got THE MOM role.....rofl!!! I was sooooo SHOCKED that I couldn't even act excited!!! Part of it is that I KNOW how much work these things are and I know in the next several weeks I have basically a BOOK to memorize (my lines and the other lines) and that same amount of blocking and ques to learn.....lol....what have I gotten myself into??? So almost every evening and every Saturday for the next several weeks...I will be at the THEATER!!! LOLOLOLOLOL!!! It will be soooo FUN to do this with dd though!! I LOVE acting and pretty much gave it up (willingly) to have a family, so it is fun to be able to do it again! :)
